Casa Silencio, Oaxaca, Mexico
Opened in 2020, Casa Silencio is a beautifully designed boutique hotel that houses one of Mezcal El Silencio's three distilleries. This luxurious 16-acre property is rooted in sustainability: the walls are made of rammed earth, the ceilings feature recycled Oaxacan wood, much of the energy comes from solar power, and a no-waste policy is in place. With just six uniquely appointed suites, you’ll find lavish touches like distressed leather accents, hand-woven wool rugs, and spa-like bathrooms with monolith stone sinks. But the highlight of your stay will be the immersive mezcal experience—chop up the agave used to make the spirit, tour the distillery, and taste the liquor paired with bites crafted by Top Chef Mexico winner Rodolfo Castellanos. As night falls, gather around the restaurant's 53-foot communal table, hand-carved from a single slab of basalt, and enjoy classic Oaxacan dishes by executive chef Daniel Robles Sumano, followed by a nightcap by the bonfire.
The Cavalier Virginia Beach, Autograph Collection, Virginia
After a four-year renovation, The Cavalier Virginia Beach, Autograph Collection reopened in 2018 with an on-site distillery: Tarnished Truth Distilling Company. All equipment at Tarnished Truth is American-made, and they produce bourbon, rye, vodka, gin, and more. Tours and tastings are available from Thursday through Sunday, and they also offer a private room for events and special pairing dinners. While you’re at this historic gem, listed on the National Register of Historic Places, unwind at the full-service spa, take a dip in the indoor pool, or relax by the beach at the new beach club.
Distillery Inn, Carbondale, Colorado
Located about 30 miles northwest of Aspen, the cozy Distillery Inn in Carbondale, Colorado features just five suites, each equipped with a fireplace, balcony or patio, and personalized minibar. The on-site Marble Distilling Co. is a zero-waste distillery, thanks to its Water Energy Thermal System that captures and reuses water and heat generated during distillation. They produce vodka, whiskey, and coffee liqueurs, all of which can be enjoyed in their tasting room, at Marble Bar with live entertainment, or delivered right to your suite.
Bowmore Cottages, Isle of Islay, Scotland
Bowmore, the first licensed distillery on Islay, has been crafting Scotch whisky since 1779. They pride themselves on traditional methods like floor-malting, honoring the spirit's heritage. Tours of the distillery are available by reservation, and a tasting bar and distillery shop are open Tuesday through Saturday. For accommodations, Bowmore Cottages offers five unique lodgings, ranging from one- to four-bedroom units that once housed distillery workers dating back to the 1840s. Alternatively, you can stay at the Harbour Inn across the street, featuring seven modern rooms and a restaurant that often serves fresh seafood from local fishermen.
The Distillery, London, United Kingdom
With a storied history surrounding gin in England, it’s only fitting that you’ll find the UK’s first distillery hotel on London’s famous Portobello Road. Called The Distillery, the "Ginstitute" team crafts gin in the basement using nine botanicals sourced globally, including juniper berries and orris from Tuscany, lemon peel from Spain, bitter orange rind from Haiti or Morocco, and nutmeg from Indonesia. Guests can create their own blend with expert guidance or participate in a masterclass on making the perfect gin cocktail. The hotel also features a store selling their Portobello Road Gin, a bar serving classic British dishes, and a cocktail lounge for highballs and mixed drinks with a menu of small bites. Spend the night in one of their three rooms upstairs, each furnished with a record player and stocked minibar. And if you want a break from gin, the property offers classes using agave spirits and whiskey.
Casa Salles Hotel Boutique, Jalisco, Mexico
In the town of Tequila, you’ll find Casa Salles Hotel Boutique, featuring 25 modern rooms, a serene spa, an outdoor pool, and a restaurant serving regional Mexican cuisine. Right next door is El Tequileño Tequila's La Guarreña distillery, founded in 1959 and known for sourcing agave from the Los Altos region of Jalisco, famous for its blue agave. Private tours are offered every morning from Monday to Saturday, where guests can learn about the production process and taste a range of tequilas from blanco to añejo.
Glenora Inn & Distillery, Nova Scotia, Canada
When Scottish immigrants arrived on Cape Breton Island in the early 1880s, the lush landscape reminded them of their homeland, leading them to name this part of Canada Nova Scotia, meaning "New Scotland." Here, you’ll find Glenora Inn & Distillery, which produces Scottish-style whisky. Originally founded by Bruce Jardine, he sought assistance from Bowmore Distillers for production training and to source authentic Scottish copper pot stills, opening North America’s first single-malt whisky distillery in 1990. The property welcomes guests seasonally from mid-May to late October, offering daily tours and tastings.
